Pinot Noir

    STYLE
    Dry, light and soft, with sweet aromatics, low tannins, and medium acidity.

    Alcohol: 12%
    Residual Sugar: 0.1 g/l
    Total Acidity: 6.4 g/l
    Grape: Pinot Noir

    Vinification
    Hand-harvested with fruit selection. Alcoholic fermentation and maceration lasted 10 days on the skins. Underwent malolactic fermentation. Aged for 14 months in used, medium-toasted French oak barrels. Bottled without fining or filtration.

    AROMAS AND FLAVOURS
    Strawberry, wild strawberry, cherry jam, clove, cedar.

    Trzebnica Hills, 185-200m above sea level, south-southwest exposure, loess soil, 1250 vines.

    FOOD PAIRING
    Duck with cranberries, goose, minced pork cutlets with beetroot, chickpea curry, mushrooms, tuna.

    TERROIR
    Trzebnica Hills, 185-200m above sea level, south-southwest exposure, loess soil, 2300 vines.

    VINIFICATION
    Hand-harvested with fruit selection, cold maceration - 24 hours, alcoholic fermentation in stainless steel tank, aging in stainless steel tank - 6 months, in 225l barrel - 18 months, no fining agents used, unfiltered.

    AROMAS AND FLAVOURS
    Apple, tangerine, lemon, white flowers, yeasty bread, oak, resin, coconut.

    FOOD PAIRING
    Moussaka, potato gratin, Caesar salad, supreme chicken, pasta in white sauce, roasted salmon, mushroom dishes.
